DIY Homemade Hot Chocolate Mix

In ninth grade, I arrived home from a debate meet to find an invitation to a friend’s house that evening.  She was throwing another one of her fabulous parties, so I scurried my tired self over. The only thing I remember from the party was the hot chocolate.  I had never had hot chocolate that didn’t come out of a foil packet.  I had imagined any other kind to be tedious & complex. When I became a mom, I thought back to that and committed to not buying those little white & silver packages and this stovetop recipe became a staple.
Fast forward a few years and a couple more kids.  Those days when even finding a matching outfit felt too overwhelming didn’t lend themselves to the task of making hot chocolate on the stove!

I adapted his recipe slightly.  The finished product, while not as good as the stovetop version, is certainly easier some days!  Bonus: the kids can make it on their own now.  A double-batch lasts us from the first of the brisk air until the warm, spring air returns.
I’m not big on chocolate, so a scoop of vanilla powder or white chocolate powder in my mug mellows the taste.  The kids love it with a few chocolate chips or marshmallow bits.

DIY Hot Chocolate Mix

Makes 5 1/2 cups
Serves 20-25
2 cups powdered sugar
1 cup cocoa (best quality you can get, dutch-processed if possible)
2 1/2-3 cups powdered milk (whole milk if you can find it, Nido is one brand & I can usually only find it at Wal-mart or Latin markets)
3/4 teaspoon salt (not Kosher salt, stick with something finer)
2 teaspoons cornstarch
Combine all ingredients in an air-tight container.
Add 3-5 tablespoons in your mix along with 2-3 ounces of hot water (or milk) and mix well. Add your remaining liquid and, if desired, finish with a splash of half-and-half or heavy whipping cream. (My kids think 4 tablespoons is perfect but play around for your family’s taste.)
